Program Description:

The Online Certificate in School Nutrition and Wellness has been designed to meet the growing demand for Registered Dietitians, DTRs, allied health/medical and fitness professionals, school administrators, parents, and the general public who want to develop healthy food programs and strategies for children in today’s school systems. This Web-based Certificate program provides information on why nearly 20% of America’s children are overweight or obese and how you can make a positive impact in your community to establish effective health, nutrition, and wellness policies that will be critical for reversing this serious problem. The health status of America’s youth will directly impact our nation’s health care system, available labor pool, and national priorities for years to come. With the knowledge gained through this certificate, participants will feel confident leading or participating in effective wellness committees, modeling optimal eating behaviors, and making your school and community environment healthy and positive.

Prerequisites

  • For adults (18 and over)
  • Students must have a GED or High School diploma to participate

Program Course List and Course Descriptions:

School Wellness and Nutrition – Problems and Effective Solutions: 50 Hours

  • This course provides background on government nutrition programs for children, and the political and budget constraints that have hindered advancement in nutritional science. It also provides knowledge about the foods served at school and why vending machines and junk foods have become staples at many schools. Finally, the course looks at the parental, community, marketing, and school-based influences on childhood nutrition.

Developing School Wellness – Children Nutritional Programs: 50 Hours

  • This course will look at the changing food environment in the U.S., including Mrs. Obama’s “Let’s Move” campaign, changes in the school lunch program, and examines school gardens as well as the organic and green movement. It will discuss the three steps to successful nutrition education and ideas for incorporating nutrition and fitness education into the school day. It will ask participants to think creatively about the best ways to reach kids through positive food, fitness and health behaviors!

This Certificate is designed for:

  • Allied health, medical, and fitness professionals, personal trainers, and Registered Dietitians seeking advanced nutrition education, re-certification, re-licensure, or career advancement.
  • Parents, teachers, caregivers and individuals from the public and consumers interested in ways to improve a child’s nutritional habits and wellness.

Continuing Education

The following National Organizations/Associations have approved each School Nutrition course for Continuing Education Credits/Units (CECs/CEUs):

  • National Posture Institute (NPI) / 5 CECs
  • American College of Sports Medicine (ACSM) / 20 CECs
  • International Sports Science Association (ISSA) / 10 CECs
  • American Senior Fitness Association (SFA) / 2.0 CEUs
  • National Council on Strength and Fitness (NCSF) / 10 CEUs
  • Commission on Dietetic Registration (CDR), the credentialing agency for the Academy of Nutrition and Dietetics (AND) has approved the Certificate in School Nutrition program for 60 Continuing Professional Education Units (CPEUs)/ or 30 (CPEUs) per each individual course taken separately for both the Registered Dietitian (RDs) and Dietetic Technician-Registered (DTRs).

Instructor Bio

Kathy Rodriguez

For over fifteen years Kathy Rodriguez’ passion has been helping people take their lives to another level in the areas of health, yoga, fitness and nutrition through education and training.

She has been an endurance athlete since 1997, completing multiple marathons, adventure races, mountaineering expeditions, and triathlons, including the formidable Ford Ironman in 2008. She worked as a whitewater rafting guide on the Colorado River and as a certified ski instructor for several years. She routinely practiced yoga to balance these athletic activities, eventually obtaining a 200-Hour Yoga Instructor Certification (KRI). Kathy’s passion’s naturally led her to pursue a career in yoga, health and wellness.

In 2002, after becoming an ACE Certified trainer, Kathy launched, Heart Above Holistic Coaching. She conducted personal training and yoga sessions in studios, fitness centers and privately throughout Southern Utah. Kathy has spoken at Southern Utah University, Cedar City Women in Business, and various other community events on the topics of fitness, yoga and nutrition. She recently relocated back to her hometown, Austin, Texas where she continues to teach and promote yoga and holistic health.

Melissa is a Certified Diabetes Educator, holds a Bachelors of Science in Clinical Dietetics and Master’s degree in Nutrition Education and practiced as Certified Nutrition Support Dietitian for 10 years. She has the Certificate of training for Childhood and Adolescent Weight Management. Melissa has 15 years of diverse experience in clinical care, nutrition management, nutrition counseling, critical care curriculum, nutrition education, media and writing, and currently serves as Co-President of the Los Angeles District of the CDA and spokesperson for the California Dietetic Association. In 2006, she started SuperKids Nutrition Inc…to save the world one healthy food at a time™ a company and mega Website resource for easy-to-read credible nutrition information and activities for families.

Career Information

According to the U.S. Department of Labor’s Bureau of Labor Statistics, by 2020, the demand for fitness trainers and instructors is expected to increase by 24 percent. Individuals in this field of work will find a continuum of salaries based upon the position and their geographical location. Salaried positions may range from $25,000 to over $100,000. Hourly positions range from $10.50/hr to over $100.00/hr. Salaries and hourly rates achieved will be determined by experience, education, and quality of service.
